"One day, I was having lunch with Jean-François Bescond at a modest Thai restaurant when—just before ordering dessert—he asked me to write a (not too long) clarinet piece for him. His dessert order was three orange cakes and we tasted them all. The first cake was pasty, the second one very stringy and the third one extremely spongey.They were the direct source of inspiration for this piece in three movements, each related to one type of cake."
